Chad Clift’s restaurant, Futoji Aji, is known in Seattle for its excellent sushi, but it’s Clift’s insistence on constantly pushing the envelope of his capabilities as a chef that has made him a prominent feature in the local culinary scene. Clift grew up in the Lake Forest Park neighborhood in Seattle, where he learned how to cook in the traditional Japanese style from his father. He honed his skill at the Oregon Culinary Institute in Portland and a Thai restaurant in San Francisco.
